Research Field Overview

With the aim of promoting food safety and security and reducing food waste, we have established a consortium with 14 food companies, research institutes, and other organizations to share an in-house database, with the aim of popularizing rapid microbial identification using MALDI-TOFMS in the food industry.
Currently, 19 groups are actively conducting joint research. In addition, to support the local food industry, we are conducting joint research on microbial control based on bacterial flora analysis using MALDI-TOF MS, and are trying to extend the consumption and expiration dates of food.

Research Topics

Activities of the Center for Gene and Genome Research

In order to actively advance research into genes and genomes, we established the Gene and Genome Research Center with the goal of disseminating the results of our research to the maximum extent possible. Through research into genes and genomes related to human cancer, reproduction and movement, plant metabolism, and microbial fermentation, we will advance research related to the development of medical technology and pharmaceuticals, health promotion, and plant breeding.

Establishment of the Food Microbiology Control Center
