
On Thursday, November 13th, a lecture was held as part of the "Food Business Future Lab," a learning activity organized by students of Global Food Business Program (GFBP), featuring Takahiro Kawashima, CEO of Obama Onsen Winery.
Kawashima brews wine in Unzen City, Nagasaki Prefecture, using fruit grown in Kyushu. The lecture began with the motivation for founding the winery, and went on to explain the winemaking process, grape cultivation methods, and the differences in brewing methods for red and white wine. He also covered a variety of topics, including the development of wine using mandarin oranges grown in Nagasaki Prefecture and pairing foods that go well with wine. After the lecture, students asked questions such as, "Is there a difference in taste between Japanese wine and wine from overseas?"
Maeda Nanako (Shimabara Commercial High School), a second-year GFBP student (Faculty Faculty of Commerce, Department of Business and Marketing), shared her thoughts, saying, "I was surprised to learn that wine is made solely from fruit, and that the manufacturing process is different for grapes and mandarin oranges. I'm originally from Shimabara City, and I was deeply impressed by the way they continue to create things in collaboration with local people. I've started my own business, and as someone who works in business, my desire to "liven up Shimabara" has grown even stronger, and I was encouraged by the fact that I have friends who are taking on challenges in the same area. In the future, I would like to be someone who can contribute to my hometown of Shimabara City through work related to agriculture and the local community."
